“If you don’t like the weather in Texas, wait five minutes and it will change.” I’ve heard this saying occasionally throughout my years living in Dallas, but it never rang truer than this last month. We’ve been bombarded with rain and storms for the past few weeks, but every so often, we’ll get a patch of nice weather to remind us that it’s summertime.
After a long day of work, I wasn’t in the mood to prepare a huge feast. I kept things simple with burgers, hot dogs, chips and salsa. For a personal touch, I made guacamole in the molcajete we received as a wedding present, and cooked up a batch of my mom’s delicious baked beans.
