Starting off the New Year with another round of Whole30! Last January, I meant to document my meals for the blog, but… *insert shrug emoji* This time, I’ve got a great support group doing the challenge with me, including Emily and Barbara from Fortuitous Foodies and Andrea from Loubies and Lulu. I’m going to try and be more diligent about prepping my meals each week, and recording them on the blog to share recipes and ideas with other Whole30’ers. Lunch: Leftover Balsamic Beef Roast with Veggies, Spring Mix Salad, Dump Ranch Dressing
Dinner: Baked Potato topped with (shredded) Balsamic Beef Roast
Wednesday
Breakfast: Scrambled Eggs, Homemade Salsa, LaCroix Coconut with MCT Oil
Lunch: Leftover Balsamic Beef Roast with Veggies, Water
Afternoon Snack: Hard Boiled Egg, Cup of Homemade Chicken Broth

Dessert: Apple Slices with Lemon Juice and Cinnamon

Breakfast: Scrambled Eggs with Diced Bell Peppers, Applegate Chicken & Apple Sausage, Apple Slices, LaCroix Coconut with MCT Oil, Cinnamon Spice Tea with Almond Milk
Lunch: Southwestern Salad with Grilled Chicken and Salsa/Guacamole
Dinner: Crockpot Salsa Chicken with Zoodles and Coconut Aminos
Friday
Breakfast: Two Hard-Boiled Eggs, Handful of Cherry Tomatoes, LaCroix Coconut with MCT Oil
Lunch: Spring Mix Salad with Shredded Crockpot Salsa Chicken, Dump Ranch, Water
Dinner: Egg Drop Soup (Homemade Chicken Broth + 2 eggs), Baked Potato
Saturday
Breakfast: Cashew Cookie Larabar Bar
Brunch: Scrambled Eggs, Applegate Chicken & Apple Sausage, Home Fries (Sliced Onions, Diced Bell Peppers, Leftover Baked Potato cooked in Coconut Oil), Unsweetened Almond Milk with MCT Oil
Dinner: Cube Steak, Caramelized Onions (with ghee), Spring Mix Salad, Dump Ranch
Sunday
Breakfast: Omelette with Ham, Onions, Red & Green Bell Peppers from La Madeleine
Lunch: Chipotle Carnitas Salad with Pico de Gallo, Hot Salsa, Lettuce, and Guacamole
Dinner: Baked Potato and Chocolate Chili

Barbie and I are thrilled to be on this Whole30 journey along side of you! Also, this post has helped me to map out some additional Whole30 foods for the rest of the week. Looking forward to trying the infamous dump ranch and I’m literally running downstairs to fix up some apple slices with lemon and cinnamon. Great idea!
